Toffee Bars (baked by Mark Ahlness)
Ingredients:
1 C butter
1 C brown sugar
1 egg yolk
1 tsp. vanilla
2 C flour
1/4 tsp. salt (or not)
6-8 oz. milk chocolate
3/4 C chopped walnuts

Heat oven to 350.  Mix butter, sugar, egg yolk, and vanilla.  Mix in flour and salt until well blended.  Spread out and pat down in a 9x13" pan.  Bake for 20 to 25 minutes, or until slightly browned (don't over-bake!).  Remove from oven, and immediately place separated squares of chocolate on top.  Gently spread evenly over top as they melt.  Sprinkle with nuts.  Cut into squares after chocolate has set.  Makes about 4 dozen squares.

Variation: Substitute white chocolate for milk chocolate.  Then sprinkle with about 1/2 C of chopped walnuts and 3/4 C of diced dried cranberries.


Robert's Rum Balls (baked by Robert Femiano)
Ingredients:
3 cups crushed vanilla wafer crumbs
1 cup crushed pecans
2 cups powdered sugar, divided in half
3 tablespoons cocoa powder
3 tablespoons light corn syrup
2/3 cup Virgin Island dark rum

1. Mix vanilla wafers, pecans, 1 cup sugar, and cocoa in large bowl.
2. Stir corn syrup into rum, then mix into dry ingredients.
3. Using your hands, shape mixture into golf ball sized cookies, and roll them into the remaining powdered sugar.
4. Store in cookie tin for several weeks.  Makes 2 dozen.  (These freeze well)


Keith's Oatmeal/Chocolate/Heath Bar Cookies (baked by Keith Leifsen)
Ingredients:
2 cups butter
2 cups white sugar
2 cups brown sugar
4 eggs
3 tsp. vanilla
4 1/2 cups flour
2 tsp. baking powder
2 tsp. baking soda
7 cups Quaker Oats Oatmeal
1 - 7oz. Hershey milk chocolate bar, chopped into large pieces
6 Heath candy bars, chopped
1 cup nuts

Cream together butter, white sugar, and brown sugar.  Beat in eggs and vanilla.  Set aside.  Mix together flour, baking powder, and baking soda.  Fold this into butter mixture.  Add this to the oatmeal, candy bars, and nuts.  Make LARGE cookies, and bake in a preheated 375 degree oven for 8-10 minutes (don't over-bake!). Makes 4 dozen LARGE cookies.


Ann's Almond Bars (baked by Robert Femiano)
Ingredients:
2 C oatmeal
1 C brown sugar
1 C butter
2 C unbleached all-purpose flour
1/2 tsp. salt
1/2 tsp baking soda

Filling:
2C sugar
4 egg yolks
3/4 C flour
1/2 C milk
6 tsp. almond flavoring

Preheat oven to 350.  Combine oatmeal, brown sugar, butter, flour, salt, and soda in a large mixing bowl, and work together until the mixture reaches a crumbly texture.  Put half of this mixture in a 9x13" baking dish.  Mix filling, and spread over mixture.  Top with remaining crumb mix.  Bake for 30 minutes.  Cool and cut into bars.
